Dip the rim of your glass in pomegranate juice, then roll it in raw cane sugar to coat.
In the glass, muddle the lime eighths with 1 tablespoon of raw cane sugar and a few fresh mint leaves.
Pour in 6oz of Bundaberg Ginger Beer.
Sprinkle in some pomegranate seeds.
Pour in 3oz of pomegranate juice.
Decorate with a sprig of fresh mint and enjoy!
