Ginger Beer Gingerbread Men
Ingredients
Biscuits
● 125g butter, at room temperature
● ½ cup firmly packed brown sugar
● 1 egg yolk
● 2 ¾ cups plain flour
● 1 tsp bicarbonate of soda
● 1 tsp ground ginger
● ¼ cup Bundaberg Ginger Beer
● ¼ cup golden syrup
● Gingerbread men biscuit cutter
Icing
● 1 egg white
● 2 cups pure icing sugar, sifted
● 2 tsp Bundaberg Ginger Beer
● Small sweets to make ‘buttons’

Step 1
Preheat oven to 180°C. Line 2 large baking trays with baking paper. Place butter, sugar and egg yolk into the bowl of an electric mixer and beat until light and creamy.

Sift flour, bicarb soda and ground ginger over butter mixture, add Bundaberg Ginger Beer and golden syrup, and mix well until a dough forms.

Turn dough onto a lightly floured surface and knead until smooth. Divide mixture into 2 even portions and form into 2cm thick rounds.

Using a rolling pin, roll 1 portion of dough at a time between sheets of baking paper, until 3mm thick. Cut out gingerbread men with biscuit cutters and place them onto prepared trays, 3cm apart. Bake for 15-20 minutes or until lightly browned. Cool on trays.

ICING

Step 1
Beat egg white in an electric beater bowl until frothy. Gradually beat in icing sugar until you reach a thick piping consistency, then stir in Bundaberg Ginger Beer.

Step 2
Spoon mixture into a piping bag and decorate biscuits, adding the sweets for buttons. Store in an airtight container for up to 1 week.

Tip
For gifting, pack gingerbread men into individual gift bags or a pretty Christmas tin. For extra Christmas sparkle, look for small edible Christmas decorations in the baking aisle.
